Hello and happy Wednesday! Hope you are all having a great week. To those of you that noticed my absence last week, thank you for being a loyal follower and I apologize for not posting! I took the week off to make some progress on wedding plans.
Lately, I’ve been wanting to try some new recipes, which unfortunately for my man, does not happen all that often. So when the feeling hits, I try to take advantage of it. Last weekend I tried out a new crock pot recipe. My poor crock pot only gets used when I’m making some sort of chili, so I’m way overdue on trying something new. Plus, it finally dawned on me that it’s super easy to make a meal in a crock pot. So, today I’ve rounded up some of the crock pot recipes that are on my list to try! Santa Fe Chicken from Skinny Taste – I tried this recipe last weekend and it was definitely a hit at our house! Super easy and very flavorful. We had it over chips, nacho style, but you could also have it over rice or in a tortilla. If you’ve never checked out Skinny Taste, it’s a great site to find all kind of lighter recipes!
Crock Pot Chicken Fajitas – Even the onions and peppers go into the crock pot. Sounds way easier than standing over the stove.
Sweet Apricot chicken – Much different flavor than what I normally cook.
Lasagna in the crock pot – I’ve never made lasagna before. Can you believe it?
Sweet pulled pork barbacoa – yum! I’m definitely trying this one.
Buffalo chicken lettuce wraps or you could serve on a bun for a more traditional take. My man would like this one.
Teriyaki chicken – Sounds yummy and again a different flavor than what I usually cook.
Thai Peanut Chicken from The Recipe Critic – We don’t have Thai very often, but I like it and this makes it seem so simple to make. The Recipe Critic is another great site to check out for recipe inspiration.
Slow cooker apple crisp – I never thought about making dessert in a crock pot, but this sounds heavenly.
Another dessert – Slow Cooker Berry Cobbler. You can use fresh or frozen berries for this one, so it works even in winter.
